Memaw has some children coming to her house for a halloween party, and she needed a tasty snack for them while they were there. I showed her the cake pops I had seen online at http://www.bakerella.com/trick-or-treats/ . These seemed like just the thing to make! So, Saturday afternoon it was Memaw and me in the kitchen (with some help from Caroline). It was so nice to be able to spend that time with her, doing something we both very much enjoy. It is precious times like that that I hold dear to my heart.
We didn't have a whole lot of time to decorate, so we kept it pretty simple. Depending on your creativity, the possibilities are endless! These were easy to do, but did take some time from start to finish. I think the end result is well worth it, though!
Start by baking a cake. (I used a box cake mix to save time.) Once that is done and cooled on a wire rack, crumble it into a big bowl and add 1 (yes, store bought) can of icing. I used the buttercream, but you can use your favorite.
Caroline then had the fun job of mixing the cake and icing together. It mixes to almost a cookie dough consistency.
Once mixed, shape them into the sizes and shapes you would like. We put them into balls and ovals. This is where the creativity can really take off. See Bakerella's sight and all she does with them.
Put these in the freezer (or fridge) until they are firm and no longer mushy. While they are in the freezer, melt several squares of the Almond bark (I used the white, but if you are a chocolate person or want dark icing, that is an option). I found melting them in the microwave works best. Be careful not to over heat it or it will lose it's consistency (trust me here...I found out the hard way!). If you want to color your icing, this is the time to add it to the almond bark.
Once the balls are firm, stick the sucker sticks into them. Dip them into the melted almond bark. Decorate as you wish! We used the small tubes of black icing to make faces on the ghosts, goblins and pumpkins.
We had a great time making these and I think she will have some happy kids when they come to the Halloween party!
